Sweet Potato Tart with Oatmeal Crust

INGREDIENTS:


PECAN OATMEAL CRUST

1 cup unsalted roasted pecans or peanuts

1 cup old-fashioned rolled oats

1/3 cup coconut oil

1/4 cup pure maple syrup

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger


SWEET POTATO FILLING

1 3/4 cup cooked sweet potato puree

1 cup pure maple syrup

2 eggs, lightly beaten

1 1/2 tablespoon cornstarch

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon nutmeg

1/2 teaspoon fine sea salt

1 cup milk (cows milk or a non-dairy milk of your choice)
